I call this my weekend lifesaver. Sure, it's just another prolific kale smoothie recipe, but I should give you fair warning that this also happens to be a magical hangover cure. It's true!
Coconut water is known to be especially hydrating. In fact, ever since the big coconut water craze of 2009, I've taken to drinking one on those horrendous mornings after an especially long happy hour. Ginger is calming to the stomach, and the frozen banana chunks lend sweetness and texture at the same time. Kale is, well, optional (although spinach would do just well), but I find that since the taste is barely noticeable anyways, I might as well add it to the mix. The smoothie is just that much heartier with it. Blended together, this is the perfect early morning breakfast, hangover or not.
For one big green smoothie:
- 12 oz coconut water, no sugar added
- 1 cup raw kale, torn into pieces
- 1 frozen banana (I tend to take overripe bananas and freeze them in pieces to make the process easier)
- 1 oz fresh ginger, peeled and roughly chopped
Combine in a blender and blend until smooth. Or, if using a food processor, combine all the ingredients except for the coconut water and process until the pieces are fine. Lastly, add the coconut water and process until smooth
