How has your week been? Work has been busy, but the incredible weather has made it nearly impossible not to be happy. This salad has been on rotation lately. Blue cheese makes any salad more pungent and substantial, and green apple is a natural pairing. However, in lieu of regular chopped walnuts, I spent one afternoon watching a bunch of youtube videos on how to candy walnuts. Instead of white sugar, I used brown sugar, which I had on hand. The result was a caramel-y slightly smoky, crunchy nugget of goodness. Sprinkle over your salads along with crumbled blue cheese and sliced apples. Drizzle with some good aged balsamic vinegar.
