Last week, I made Adrianna's Arroz Con Pollo. If this dish isn't proof that this year is the Year of the Chicken Thigh, then I don't know what is. Savory, meaty, filling, warm, hearty, flavorful and bright, all in one dish. and with very little cleanup to boot. The recipe calls for a non-traditional ingredient, saffron, that makes a world of difference.
The only adjustments I made were to add a bit more red pepper flakes, and to smother it with hot sauce before eating. Her blog is one of my favorites to follow, for her witty comments, beautiful pictures, creative recipes, and that adorable new corgi pup!
