Watermelon and feta is one of those things I am weary of. It's among the things I generally don't trust, right alongside meat imitations and people who wear vibram five toes. How could something so tasty separately taste good together? Watermelon is so juicy and never have I desired my salads to be juicy. Well folks, I am still on the fence with this one, but everyone else who's tried this combination seems to enjoy it so here we are.
I love the bright peppery-ness that the arugula brings. Pair it with a sweet aged balsamic (or lemon juice) and toss with watermelon cut in 1 inch cubes. Sprinkle crumbled feta over this. Do I have to write out a recipe for this? No? Ok good.
